Such a great piece of meat, had to be named with an unusual name. Also called top sirloin for its signature cut, picanha is the most popular cut in every Brazilian Steakhouse. It’s mild in flavor and has a lean cut with a thin fat cap that adds even more flavor.

Our Center Cut Picanhas are aged up to 4 weeks for maximum tenderness and flavor.

Each piece is cut with precision and poise by our veteran butchers.

Place seasoned steaks in a frying pan over high heat, fat side down first to render, before searing on both sides. Once a rich, golden crust has developed on both sides, reduce the heat to medium and cook for 3-4 minutes on each side for medium rare, or until desired temperature is reached. If you're using an outside grill, make sure it's preheated and as clean as possible. Take a little piece of fat and massage it on the grill to  prevent the steaks from sticking. Place the picanha steaks in a circular motion on the outside edges farthest away from the searing heat; otherwise, the exterior will overcook before the center is done. Close the hood and cook the steaks for 6 minutes at 120°C / 248°F before flipping them. After 6 minutes, move the steaks to the center of the grill and sear on both sides. Check the internal temperature using a meat thermometer, aiming for 54°C 130°F for medium rare or to desired temperature.
