Preheat the oven to 475 degrees Fahrenheit. Place the bones so that the marrow is facing up. Drizzle with oil and season with salt and pepper to taste. Bake for 45-60 minutes, or until the bones are thoroughly browned and the marrow is gently bubbling.
Remove the bones from the oven and let them to cool slightly. Sprinkle with chopped parsley, a squeeze of lemon juice, and salt & pepper to taste. Enjoy the marrow by scraping it out with a tiny spoon or knife.
