Method 1: Oven-Roasted Marrow Bones

  1. Preheat the Oven
    Set your oven to 450°F (232°C).

  2. Prepare the Bones
    Place marrow bones on a baking sheet lined with foil or parchment. Season with salt, pepper, and optional herbs like thyme or rosemary.

  3. Roast Until Bubbling
    Roast for 15–20 minutes until the marrow is soft, bubbling, and slightly pulling away from the bone.
    Internal Temperature Guide:

    • Fully Roasted & Safe to Serve: 145°F+ (63°C+)

  4. Rest Briefly
    Let bones rest for 2–3 minutes before serving so the marrow thickens slightly.

  5. Serve Immediately
    Spoon marrow onto toasted bread or serve as-is with flaky salt.

Method 2: Grilled Marrow Bones

  1. Preheat the Grill
    Set grill to medium-high heat, approximately 400–425°F (204–218°C).

  2. Season the Bones
    Season lightly with salt and pepper; drizzle with a small amount of olive oil.

  3. Grill Cut-Side Up
    Place bones on the grill away from direct flames. Grill for 15–18 minutes until marrow is soft and begins to bubble.

  4. Optional: Add Aromatics
