Method 1: Cast-Iron Sear for Gold Grand Champion 2026 Kobe Strip Half Steak

  1. Bring Steak to Room Temperature
    Remove the Kobe Strip Half Steak from the refrigerator and let it rest for 20–30 minutes before cooking.

  2. Season Lightly
    Pat dry and season with a small amount of kosher salt. Avoid heavy seasonings, as authentic Kobe beef is prized for its delicate flavor and intense marbling.

  3. Preheat the Pan

  5. Render the Fat Edge
    Using tongs, hold the steak on its fat edge for 10–20 seconds to render and crisp the exterior fat.

  6. Rest Briefly
    Allow the steak to rest for 2–3 minutes before slicing.

  7. Slice & Serve
    Slice against the grain into thin strips and serve immediately while warm and buttery.

Method 2: Teppanyaki-Style Kobe Strip Half Steak

  1. Preheat the Cooking Surface
    Heat a teppanyaki griddle or flat-top to 450–500°F (232–260°C).

  2. Season Minimally
    Apply a light sprinkle of salt just before cooking.

  3. Cook Over Direct Heat
    Place the steak directly on the hot surface.
    Approximate Cook Times:

    • ½" Thick Steak: 20–30 seconds per side
    • 1" Thick Steak: 35–60 seconds per side

     

  4. Monitor Internal Temperature
    Aim for:

    • Rare: 120–125°F (49–52°C)
    • Medium-Rare: 130–135°F (54–57°C)

  5. Rest & Slice
    Rest for 2–3 minutes, then slice into thin strips for serving.
