What Makes Wagyu Beef Special?

The cows were originally prized for their physical endurance. They are fed a specialized diet for 600 days that include fresh grass, alfalfa and rice straw. Each Black, Brown, Shorthorn, and Mukaku Wagyu cow can cost up to $30,000 in comparison to a regular beef cow that comes in at only $2,500. This is to ensure consistency and flavor. Although lauded for its prized fat, decadent Wagyu beef has a lower cholesterol count than chicken or turkey.

Japanese Meat Grading Association, JMGA, grades the beef’s ranking quality and yield based on fat marbling, texture, color, firmness, brightness and fat quality. More marbling means a tender, creamier texture, and is what wagyu beef connoisseurs highly prize. The higher the Beef Marble Standard score (BMS) the more expensive the beef. The Top Tier on the Japanese scale, a BMS of 8 to 12, is denoted A5.

Australian Wagyu is the result of breeding a 100% full-blooded Wagyu Sire and an Angus Dam. An F1 Crossbred or First Crossbred Generation is 50% Wagyu Genetics. Taking advantage of their reputation and experience in the cattle industry, Australian ranchers introduce the very best genetics through an F2 and F3 crossbreeding with up 87% Wagyu Genetics. They created something new and unique to a market looking for something rare and exclusive under their former Brand “F1" and now call Wagyu X.

Just as the Japanese Beef, Australian Beef tenderness, juiciness and richness is determined by BMS. Australian grading score scale tops out at 9 with everything above it denoted as 9+ in some cases.
