1. Pan-Seared with Butter Baste
Ingredients:
- Sterling Silver Dry-Aged Bone-In Rib Steak
- Kosher salt
- Cracked black pepper
- 2 tbsp butter
- 2 garlic cloves (smashed)
- Fresh rosemary or thyme
Instructions:
- Bring the steak to room temperature and season generously with salt and pepper.
- Heat a cast iron skillet over high heat until very hot.
- Sear the steak for 3–4 minutes per side until a deep crust forms.
- Reduce heat to medium, add butter, garlic, and herbs.
- Baste the steak with melted butter for 1–2 minutes.
- Cook to desired doneness (130°F/54°C for medium-rare), then rest for 5–10 minutes before serving.
2. Reverse Sear Method (Oven + Sear)
Ingredients:
- Sterling Silver Dry-Aged Bone-In Rib Steak
- Olive oil
- Salt and pepper
- Optional: garlic powder or steak rub
Instructions:
- Preheat oven to 250°F (120°C).
- Season the steak and place it on a wire rack over a baking sheet.
- Roast until internal temperature reaches 120°F (49°C) (about 45–60 minutes).
- Remove and rest for 10 minutes.
- Sear in a hot skillet or on a grill for 1–2 minutes per side to finish.
- Rest again briefly before slicing and serving.
