Preheat the oven to 450°F. Place the roast on a rack in a shallow roasting pan. Cook to desired doneness without adding any water or covering the roast. Roast until a meat thermometer reaches 130°F (approximately 25-30 minutes) for medium-rare doneness or 140°F for medium doneness (about 30–35 minutes). Transfer the roast to a carving board and tent loosely with aluminum foil. Allow it to rest for 15-20 minutes before cutting. During this period, the temperature of the meat will rise by up to 10°F and then enjoy!
