Get a decent meat thermometer and aim for an interior temperature that corresponds to the level of doneness you want. The finest way to serve prime rib is rare or medium rare. Prepare herb rub. Combine salt, pepper, fresh thyme, rosemary, garlic and olive oil and rub it all over the outside of the roast. Place in a cast iron, roasting, or other over safe pan. Start it in the oven at a high temperature to get good browning on the outside of the roast. Then, cook it at a lower temperature to make sure the meat in the center doesn't get overcooked. For a rare roast: 115°F. | For medium rare: 120°F. | For a medium: 130°F. Allow it to sit for 15 to 20 minutes before serving. The internal temperature of the prime rib roast will rise by 5 to 10 degrees while resting.
