Allow the steak to come to room temperature for 30 minutes before cooking to help it cook faster and more evenly. Preheat the oven to 400 degrees F. Heat a big cast-iron skillet over high heat for 5 minutes. Using paper towels, pat the steak dry and season with salt and pepper. Cook the steak over medium heat for 3 minutes, or until browned and crispy. Turn the meat in the skillet and place it in the oven for 12 to 15 minutes, or until an instant-read thermometer placed in the thickest section registers 120° for medium-rare, or until desired temperature is reached. Transfer the steak to a cutting board and let aside for 10 minutes before serving.
