Pat dry and season with salt and freshly cracked pepper. High marbling means minimal seasoning is best. -
Sear the Steak
Heat a cast iron skillet over high heat until very hot. Add a splash of high smoke-point oil.
Sear steak for 2–3 minutes per side until a rich crust forms. -
