    Add 2–3 tbsp butter (30–45 g), crushed garlic cloves, and fresh rosemary or thyme. Baste for 30–60 seconds.

  5. Finish in the Oven

    Set oven to 250°F (121°C) for slow, even cooking.

  2. Season & Prepare
    Season with salt and pepper. Place on a wire rack over a baking sheet for proper airflow.

  3. Slow Cook
    Cook until internal temperature is 10–15°F (5–8°C) below your target doneness.
    Pre-sear internal temperatures:

    • Rare: 110°F (43°C)
    • Medium-Rare: 120°F (49°C)
    • Medium: 130°F (54°C)
    This creates edge-to-edge even doneness.

  4. Sear for Crust
    Heat a cast iron skillet or grill to high heat (500–550°F / 260–288°C).
    Sear for 1–2 minutes per side until well-browned. Don’t forget the fat cap.

  5. Rest & Serve
    Rest for 10 minutes before slicing alongside the bone.
