Colorado lamb is raised in the foothills of the Rocky Mountains. There they are free to roam and graze on high quality forage such as wild grasses, berries and carrots. For a short time their feed is later supplemented by hay, alfalfa and corn to round out a healthy diet. Colorado lamb is hormone and antibiotic free.

Rack of Lamb is a classic center of the plate dish. Renowned chefs will pan sear the lamb rack to a golden brown, lightly seasoned with sea salt, cracked pepper and virgin olive oil, then complete the lamb rack by placing it in the oven.

With so many flavors, this dish deserves to be enjoyed any day of the year. Domestic lamb has a mild flavor and is rich in quality.  Because of their grain diet, Domestic Lamb it is well now for having a less gamey flavor compare to imported Lamb.

Place Lamb (Rack and Chops) on the Roast or Grill until internal temperature reaches 130-140 Degrees F (Medium-Rare). Let rest for 8-10 minutes on racks.
