Preparation Instructions

Cook it over high heat on a grill or in a hot cast-iron pan to sear, then transfer it to indirect heat until medium-rare, approximately 130º to 145º. or until satisfied. Melt and drizzle some delicious compound butter, add in some thyme and lemon zest or parsley, chives, and shallots. Looking to spice things up? Jalapeno, lime, and cilantro are also a great touch.
