Method 1: Oven-Roasted American Wagyu Marrow Bones

  1. Preheat the Oven
    Set your oven to 450°F (232°C). High heat helps the rich Wagyu marrow melt perfectly.

  2. Prepare the Bones
    Place marrow bones cut-side up on a foil-lined or parchment-lined baking sheet.
    Season with salt, pepper, and optional herbs such as thyme or rosemary.

  3. Roast Until Bubbling
    Roast for 15–20 minutes, or until the marrow is soft, bubbling, and slightly separated from the bone edges.
    Internal Temperature Guide:

    • Fully Roasted & Safe to Serve: 145°F+ (63°C+)

  4. Rest Briefly
    Let the marrow rest for 2–3 minutes so it thickens slightly and becomes easier to spread.

  5. Serve Immediately
    Spoon the hot marrow onto toasted bread, lightly salt, and enjoy.

Method 2: Grilled American Wagyu Marrow Bones

  1. Preheat the Grill
    Heat grill to medium-high, approximately 400–425°F (204–218°C).

  2. Season the Bones
    Season with salt, pepper, and optional olive oil or garlic.

  3. Grill Cut-Side Up
    Place bones over indirect heat.
    Grill for 15–18 minutes until the marrow softens and begins bubbling.

  4. Optional: Add Aromatics
    Top with garlic, herbs, or a pinch of chili flakes during the last 5 minutes for enhanced flavor.

  5. Serve Hot
    Remove from grill and serve while marrow is molten, rich, and spreadable.
