3 Great and Super-Easy Mother's Day Lunch Recipes

Mother's Day is approaching quickly. Have you figured out what you are going to do this year to express your gratitude for everything your mother has done for you over the years? While gifts and words of appreciation are excellent, sometimes all mom wants is a break from her regular duties. This year, give your mother a break she deserves and take meal prep off her normal list for family celebrations. 

Making a delicious meal is not difficult, and with the right recipe, anyone can walk out of the kitchen looking like a master chef. Make your mother proud of how well she raised you, and everyone else feeling like they need to step up their game when you prepare one of these three mouth-watering recipes this year.

Pan-seared Filet Mignon 
Determine how many you are cooking for and purchase adequate fillets. Sprinkle each side of the fillets with salt and pepper, and then rub the seasonings into the meat using your fingers. 
Melt butter with olive oil in a large cast-iron skillet using medium heat. Add filets and cook 5-7 minutes on each side.
Remove the skillet from the heat, cover filets with foil and allow to stand for 5 minutes before serving.

Easy Chateaubriand
Thoroughly coat your beef with vegetable oil and then season with a fresh, ground black pepper. Allow this blend to rest at room temperature for at least one hour. 
Heat a large skillet over medium to high heat. Sear the meat quickly, about 5 seconds on each side. Promptly remove from skillet. 
Melt and brown butter in the same skillet. Once the butter is melted and browned, return it to the skillet and fry in the butter for at least 4 to 5 minutes on both sides. The outside of the meat should be browned and crisp. Once cooked, remove the meat from the skillet and allow stand for about 5 minutes for the juices to settle.

Super Simple Salmon 
Combine minced garlic, basil, salt and lemon juice to taste in a small bowl. Using this blend, rub in equal portions onto each salmon fillet.
Melt butter in a skillet using medium heat. Thoroughly cook the salmon in the butter until it is brown and falls apart easily, usually about 3 minutes on each side.
